Easy No Prep Slow Cooker Meals - Episode 1: Slow Cooker Creamy Tomato Basil Chicken

We love cooking (hate cleaning). Even more, we love cooking that feels lazy and tastes delicious.

As we prepare for cooler fall and (sorry) weather, we always love to have some easy, minimal prep, go-to recipes that we can throw in the slow cooker at the beginning of the workday to come home to after a day full of fitness equipment sales, service, rentals, and installs! I am also pregnant and will be welcoming our second child in 2023 so I am exploring some very easy meals I can pre-make & freeze to throw in the slow cooker when the little babe arrives. 

Another thing you may or may not know about me - I almost NEVER follow a recipe to perfection. I will forever add more garlic - no such thing as too much in my opinion. And I am always trying to use whatever is in my fridge.

Slow Cooker Creamy Tomato Basil Chicken

This one was incredibly flavorful and delicious for the amount of effort it required. We served it on a bed of rice with shredded zucchini from local Regina gardeners IG Fresh!

Ingredients

- 3/4 cup tomato sauce

- 1 & 3/4 cup diced fresh tomato  or 14 oz can diced tomatoes

- 3/4 cup heavy cream

- 2 tbsp corn starch

- 3 tbsp minced garlic

- 1 tsp salt

- 3 tbsp fresh basil

- 1/4 tsp pepper

- 4 boneless skinless chicken breasts

 

Directions

1. Add tomatoes and tomato sauce to slow cooker.

2. Whisk together cream & corn starch - add to slow cooker. Stir in garlic, basil, salt, & pepper.

3. Add chicken breast and press down into sauce.

4. Cook on low for 4 hours or until internal temperature reaches 165 degrees F.

 

This 100% will make it onto my list of meals to prepare before the arrival of our baby in 2023, but it's delicious anytime!
